Does anyone know how to save e-mails sent through outlook 2003 to cd for archiving

This is the method I use at home except I use it for Outlook 2007. We also use this method at work using Outlook 2003. After creating the PST file you can burn it to CD for Backup. If you every need to view the archived mail you just copy the burnt PST file from the CD to your C Drive then add it to Outlook to view.
