does anyone know the keystrokes used in this Intel BIOS, nothing about using the ESC key to return to previous menus or what keystrokes to change values, used the BIOS by Menu in this link

I've never seen a bios (program) that didn't have the navigational/function key legend in every screen. It's usually along the bottom or side of every screen.
