I got a Windows 2000 domain controller with several users, files etc and I wish to migrate all of this to a seperate server which is standalone, is therefore not a domain controller and runs Windows 2003 R2. Which tool can I use to perform this migration through a gigabit network and with ease?

You gigabit network is OK I also do that.
But I think best way is to make a back up using NTbackup of your windows 2000 and restore it to your new system. I am talking of back files(data only) not including the system state of your old server.
