It should appear in start > Control Panel > Add/Remove Programs

Personally I would not remove it. It is the current IE for XP SP2 and all security updates in the future will depend on it.

Removing it will also remove all subsequent Windows Updates since the install. It will also just reinstall itself unless you turn off Automatic Updates. Microsoft considers IE7 as a Critical Update for XP SP2.

Again I would suggest just getting used to it as it is a vast improvement both in usage and security.
