Why do fast paced videos appear pixelated?

This appeared to be the most fitting area I could post this in, apologies if not.
Feels good to be back, and hi everyone.

I realized today, that when I record fast paced games such as cars and racing with my HDPVR, they appear to be pixelated, but slower paced games such as Halo, Street fighter look completely fine and delicious. I just really wanted to know the logic behind it, that's all. They look fine small, -everything does- but when the fast paced videos are enlarged, it looks like I used a cheap dazzle which I find insulting ]:: Is there a way around this? Everybody has to deal with it, but idk, I just ask weird questions...

    Lets say for example

A street fighter video I have which looks perfectly fine
    YouTube - VINcenzOlBlueiz [ Gen ] vs CRAYONSEED [ Rose ] SSF4 Online Matchs True HD - S Series

And the need for speed video I just put up, which looks fine small, but enlarged at high speeds -the entire video is just high speeds- it looks like a load of pixels.
YouTube - Need for speed Hot Pursuit Porsche 911 GT3 RS - Time trial race - G Series

Maybe i'm just going crazy and I randomly decided to ask a question because I miss dal and i'm really sick D: either way, feels good to be back.

Oh, and I noticed the actual video looks fine, but once its converted on youtube, this happens - which already answers my question technically.. but idk my curiosity thinks theres more to it -
